To be honest with you guys, I really wasn’t sure I wanted to make this recipe. I LOVE me some avocados… but did I really want them for dessert? Even after slicing them up, I considered just making some guacamole out of these pretty avocados.
I chose the recipe from Giada De Laurentiis because, well… it’s Giada. Surely, Giada wouldn’t mess up these beautiful avocados.
Even after I made it and gave it time to chill, it took me a little while to actually try it. Like a little kid, I stared at it… I sniffed it and examined it before I dipped my spoon in. Oh boy… this stuff was good! It is has a wonderfully rich chocolate flavor, as you can imagine. The chocolate chips + the cocoa powder make it rich perfection.
And, it’s so rich that the 1/4 cup serving is plenty. I’ve eaten through 4 servings that I made (and still have 2 left!) With every tiny cup I eat, I’m amazed by how rich and delicious the flavor it. So chocolate-y, and with a texture similar to chocolate frosting (which I love!)

Chocolate Avocado Mousse
From Giada De Laurentiis
Serves 6
INGREDIENTS
1/4 cup semi sweet chocolate chips
2 very ripe avocados, peeled and pitted
1/4 cup unsweetened cocoa powder
1/4 cup agave
1/2 Tbsp. pure vanilla extract
1/8 tsp. fine salt
1/4 cup unsweetened almond milk
INSTRUCTIONS
1. Place the chocolate chips in a small bowl. Heat them in a microwave safe bowl for 20 seconds, and stir. Heat another 30 seconds, and then stir until all chocolate pieces have melted. Note: Do not overcook the chocolate.
2. Place the melted chocolate, avocados, cocoa powder, agave, vanilla, salt, and almond milk in a food processor. Blend until smooth and creamy, scraping the sides of the bowl as needed.
3. Spoon creamy delicious mousse into parfait cups and chill for 3 hours prior to serving. Note: Can be prepared up to a day in advance. I used some of my tools for my mini desserts to pipe the mousse into my mini martini glasses. So cute!
