I’ve been trying to food prep each weekend so that I have side dishes ready to go each week.
A few months back, I tried cooking carrots in the crockpot and loved the results! I don’t love raw carrots, but I love them cooked for extended periods like with a roast and roasted until caramelized in the oven.
This recipe makes the most tender, flavorful carrots. A lover of all things ranch, I’ll be making these bad boys again (and recommend you do too!)
Slow Cooker Ranch Carrots
INGREDIENTS
1 lb. baby carrots
1 cup chicken broth
2 Tbsp. Ranch mix (not the whole packet!)
INSTRUCTIONS
1. Add carrots to the slow cooker. Pour broth on top.
2. Top with ranch dressing mix. Stir to combine.
3. Cook on low for 6-8 hours, until tender.
4. Serve and enjoy!
