Sweet potatoes were one of those foods that I decided I didn’t like a long time ago.
I’m so glad I came to my senses and tried them again over the past several years. Not only are they a pretty, pretty orange color… but they’re sweet and so dang delicious!
I’ve put them in chili, I’ve roasted them with coconut oil, I’ve made them into a shepherd’s pie, and now… I’ve made my first Sweet Potato Soup.
Slow Cooker Sweet Potato Soup

Serves 4
INGREDIENTS
2 sweet potatoes or yams, peeled and diced
1/2 onion, sliced
1 (14oz) can of light coconut milk
1 cup vegetable broth
2 garlic cloves, minced
1 tsp. dried basil, more to taste
salt and pepper, to taste
INSTRUCTIONS
1. Place all ingredients in the crockpot. Stir to combine.
2. Cook for 3 hours on high.
3. Use an immersion blender, blender, or food processor, and puree mixture until smooth.
4. Serve and enjoy!
