Yep, I’m in New York City… can you believe it?? As the next stop on my Happiness Tour, I’m in the Big Apple for a really exciting opportunity.
A few months back, I got a call from my friends at Jenny Craig telling me that they were planning an exciting recipe contest and inviting me to get involved! As part of the fun, I’ve traveled to the Big Apple to help them announce the contest in a VERY special way!
Jenny Craig named the contest “Simple Inspirations,” and I couldn’t be more excited to tell you about it. Not only does it allow for JC members to showcase their own volumizing ideas, but it also gives those who enter a chance to win some amazing prizes!! I mean, who wouldn’t love to win a $2000 gift card, to have your recipe featured in a potential Simple Inspirations recipe book, or win a month of free Jenny food!!
A long time Jenny Craig member, I’ve leaned on their “volumizing” method for years both to lose weight and maintain my weight loss. To “volumize” a recipe is to enhance the flavor and overall volume of the meal using fruits, veggies, and other ingredients!
Over the years, you’ve seen me volumizing my Jenny meals. I consider it a challenge to take a Jenny Craig meal and add vegetables in a creative way that makes it taste completely different, and even more delicious! Here’s a few examples…
- I’ve transformed the Turkey Burger into a tasty Turkey Burger Chili.
- I’ve pumped up the Baja Chicken Quesadilla with Spinach and Artichokes.
- I’ve doctored up the Macaroni and Cheese and turned it into Spicy Queso Mac and Cheese.
- I’ve morphed the Chicken Fettuccine into Buffalo Chicken Fettuccine (one of my favorites!)

In the end, I absolutely know that volumizing has been a HUGE contributor to my success and I couldn’t have lost (and kept off) 70 lbs without this essential cooking technique!! To most dishes I make, I add at least an extra cup of veggies!

Now through September 8, Jenny Craig is accepting your submissions for your best volumized recipe via their Facebook Page. You’ve shared with me your volumizing success stories, now it’s your time to share it with the Jenny community!
Here’s how to submit your winning recipe:
- Go to the Jenny Craig Facebook
- Upload a picture of your volumized meal
- Select a creative name for your recipe
- Include all your recipe ingredients and measurements
- Make sure your submission is Jenny Craig friendly and uses a current Jenny Craig menu item.
