My kitchen has definitely changed in 2015. As I’ve recommitted to the Jenny Craig program and I’ve been working on losing the last of my excess weight, my cooking style has transformed.
I’m eating the majority of my main dish meals from my freezer. As someone who LOVES to cook and loves to express myself via cooking, I still find myself trying new dishes every week… but for now, this means a lot of vegetables and side dishes, as opposed to main courses and desserts.
I haven’t even baked any birthday cakes this year! And, I always bake birthday cakes…

This easy to make slaw has been a quick-to-prepare salad that I portion out and eat as an easy snack. It’s got the sweet and tart taste of the cranberries and a fantastic crunch from the broccoli slaw. So delicious and a fun compliment to your healthy eating plan…
Cranberry Broccoli Slaw
Serves 4
INGREDIENTS
1/3 cup light mayonnaise
1 Tbsp. sugar
3 cups raw broccoli slaw
1/4 cup diced scallions
1/4 cup reduced sugar dried cranberries
freshly ground black pepper
INSTRUCTIONS
1. Mix mayonnaise and sugar in a small bowl.
2. Combine all of the broccoli slaw, scallions, and dried cranberries in a large bowl.
3. Add mayonnaise mixture and stir well. Season with freshly ground pepper, if desired.
4. Allow to refrigerate overnight before serving. Enjoy!
