Fiesta Flatbread {+ a Popchips GIVEAWAY}

Ever since I’ve started making pizzas with Flatout Bread, I’ve considered making a mexican pizza.

There’s something awesome about taco meat, cheddar cheese, topped with veggies.  When I received a case of Popchips to create recipes with, I knew that it was prime time to create this Mexican pizza I’d been thinking about, and the recipe I wanted to use to launch my giveaway!

This pizza is going to knock your socks off… it’s got the spicy taco meat and yummy pepperjack cheese.  Then, it’s topped with cool veggies and crunchy Popchips – - Yum-O!

When I made this dish a week or so ago, I challenged my Instagram friends to help me devise a name for it.  Ashley came up with Fiesta Flatbread… and it was PERFECT!

Now, about your case of Popchips Tortilla Chips…. I’ve showed you a few different recipes that you can use with these tasty tortillas (PopChip-Topped Taco Soup and today’s Fiesta Flatbread, of course), but mostly… they’re just amazing to snack on!  I absolutely love the ones I’m offering today because they’re in snack-sized (AKA portion-controlled) bags, and you’ll get a chance to try all the flavors:  Chili Limon, Nacho Cheese, Ranch, and Salsa!

Fiesta Flatbread

Serves 1


1/8 lb. lean ground turkey or beef

1-2 tsp. taco or fajita seasoning

2 slices Kraft 2% Pepperjack singles

1 wedge Laughing Cow Queso Fresco & Chiptole cheese

shredded lettuce


diced tomatoes

sliced olives

1 Tbsp. Kraft Light Ranch Dressing

3-4 Popchips Nacho Cheese flavor


1.  Preheat your oven to 400 degrees.  Brown ground meat in a skillet.

2.  Move browned, fully cooked ground meat to the food processor and add taco or fajita seasoning.  Note:  I prefer to use taco seasoning, but I only had fajita seasoning… that worked too!

 3.  Spray a pizza pan with cooking spray and place the Flatout Bread on the pan.  Spread the wedge of Laughing Cow cheese on the flatbread.


4.  Top your flatbread with seasoned ground meat.

5.  Add two slices of Kraft Pepperjack.  Place in oven and bake for 14 minutes, or until cheese is melted and edges are browned.

6.  Prepare your toppings by chopping them.

7.  Place lettuce and tomatoes in a bowl and toss the veggies with Light Ranch.

8.  Remove pizza from oven once ready, and top it with salad mixture.

9.  Top pizza with scallions and a few olive slices.  Then crumble 3-4 Popchips on top of the pizza.

10.  Slice and serve this masterpiece.

      I really like the cheese, if it’s melted. I’m not crazy about it uncooked… but I prefer most cheeses melted…

    That looks so yummy!! It is only 10:00 and I want it now. 3 questions, do you normally prefer groound beef over ground turkey and if so why? I know on the Biggest Loser they are always plugging the turkey or chicken.

    Also how many servings is one pizza?

    What section of the store are the chips in? I have not seen the tortilla yet, only the salt and vinegar which I am addicted to, and they are not like a tortilla ship, I always shop at publix, so have not tried any others.

      Lots of questions, Kim!

      1 – I tend to prefer lean ground beef, but you can really go with either turkey or beef. The key is to make sure it’s the extra lean and or extra lean turkey breast. If you get the cheaper regular turkey, you might as well eat regular ground beef. I think that’s just their sponsor…. I love BL, but they’re shameless with their sponsors.

      2 – One flatbread = one serving. You could eat half if you wanted, but it’s really pretty reasonable to eat the whole thing as the flatbread is only 90 calories!

      3 – The chips should be near the regular Popchips in the chip section. In my stores, they’re near the healthier chips (Pirate’s Booty, etc.) I’m hearing others say that they are having trouble finding the tortillas… I’m going to email Popchips tonight to see what they suggest.

      I had eaten most of what I had… so I opted for the Nacho! I really think any flavor would work!

    I’d try them all! I love regular Pop Chips in BBQ. I can eat a whole bag…probably defeats the purpose though. I’m trying this pizza for sure! Did I mention I’m starving? Where’s my lunch?

      This made me laugh OUT LOUD today… Hilarious. I hope you’ve eaten. It’s an insanely good pizza… I loved every bite! I was telling Angela tonight that it might be good with a few avocado chunks, if you’re ok with the extra calories….

      Mexican pizzas rock the house… where have you seen the popchips locally? I still haven’t found them in stores yet…
