During my recent travels to New Jersey, I met a new salad and we fell in love. My friend Natalie lives in the seriously adorable town of Red Bank, NJ and that’s where I spent the weekend.
She had run across an incredible salad at a local fresh juice restaurant a few weeks prior, and we agreed we would order salads when I was in town. She described it to me as being topped with brussels sprouts and a magical champagne vinaigrette, and I knew I loved it before I had even met it.
Since then, I’ve been craving colorful pretty salads like the one I had that day from The Blonde Shallot. I did my best to recreate it below with a few ingredient swaps and adding chicken to the dish for some extra protein!
This salad came out EXACTLY as I wanted it to, and {if I may say so} even better than the original. I calculate this recipe as coming in at 6 Freestyle Smart Points per serving. I know, you’re thinking that sounds steep for a salad, but this salad has crunchy cashews, creamy fontina cheese shreds, and a delightful light champagne vinaigrette. Totally worth it!
Not only did I make one salad for lunch on Sunday, but I made three others to enjoy during the week!

Crunchy Green Salad with Chicken and Champagne Vinaigrette
Inspired by The Blonde Shallot
Serves 1
INGREDIENTS
2 1/2 cups mixed greens
1/2 cup raw brussels sprouts, shredded
2 Tbsp. red onion, finely sliced
1/3 cup edamame, shelled and cooled
.5 oz fontina cheese, shredded
1/2 packet 100 calorie Emerald Cashews and Pieces
3 oz. chicken breast, cooked (I used Baked Garlic Chicken)
2 Tbsp. Girard’s Light Champagne Vinaigrette
INSTRUCTIONS
1. Create a bed of greens with mixed greens, and top with brussels sprouts.
2. Add edamame.
3. Top with onion, cashew, and fontina. Add chicken and salad dressing. Serve, and enjoy!
