Something I love about this Weight Watchers community is how incredibly generous everyone is about sharing! Whether it be product finds, grocery lists, how to sell clothes that no longer fit. I’ve seen so many great ideas on Instagram and Facebook that have helped me in these first few months.
I spotted the idea for this recipe on Instagram from Running With Frosting, and made a few modifications to make it taste more like my tried and true banana bread. The result… amazing!
Banana bread has always been a weakness. My mom always made mini loaves, and I’ve always struggled with eating more than a few mini slices. With this recipe, I can eat the whole loaf – – guilt-free and for only 2 SPs!
Healthy One-Serving Banana Bread
Inspired by Running with Frosting
Serves 1
INGREDIENTS
1 ripe banana
1 egg
1/4 cup Kodiak Cakes Buttermilk Flapjack Waffle Mix
1/2 tsp. vanilla
pinch of salt
1 packet Truvia (optional)
1 tsp. unsweetened coconut (optional garnish)
cooking spray
INSTRUCTIONS
1. Preheat oven to 400 degrees.
2. Mix first 6 ingredients in a small bowl until well-blended.
3. Place in a mini loaf pan, prepared with cooking spray. Top with coconut. Do you need a pan this size? Click here.
4. Bake for 20-25 minutes at 400 degrees.
