So, I’m going through an orange phase. Orange clothing is amongst my favorite, orange toenail polish on my toes, and really anything orange makes me happy these days.
I’m not sure if it’s because my sacral chakra is out of whack, but I’m even eating orange foods these days… specifically carrots and sweet potatoes. Including these pretty carrots I made last week.
I found this recipe as it popped up in my Facebook feed. It was one of those great video segments that seem to be all over social media, where you quickly see recipes come together on camera. Just between us friends: I shot several of these recently with a brand I love – – REALLY!
This combination sounded amazing, and I had to try it. I mean, ginger + maple syrup + orange juice = amazing flavor! Add in the carrots and caramelize them in the oven… delicious.
Oven-Roasted Maple Ginger Carrots

Serves 4
INGREDIENTS
1 bag carrot chips
1 tsp. fresh ginger, grated
1 Tbsp. melted coconut oil
1 Tbsp. orange juice
1/4 cup sugar-free maple syrup
1/8 tsp. kosher salt
INSTRUCTIONS
1. Preheat the oven to 400 degrees.
2. Place your carrots in a large bowl. Add coconut oil, ginger, orange juice, salt, and maple syrup. Toss to combine.
3. Pour your carrot mixture out onto a baking sheet, topped with parchment paper.
4. Bake for 40 minutes until carrots are done and lightly caramelized.
