So, amongst us friends… I’ll tell you, today is my birthday eve!
I’ve always loved my birthday and have plans to celebrate all weekend long with dear friends. In doing so, I’m sure there will be a sweet treat, which is so hard for me to resist on special occasions like this (Ahem… my blog title says it all!)
So, in honor of my birthday being tomorrow, I thought I’d share with you a one-serving coffee cake I found over at Chocolate-Covered Katie. While it is still a little indulgent, you can only have one… And in some way, I feel that’s safer!
I ate it for breakfast over the weekend, and loved every morsel of it! You should definitely try this one, y’all!
One-Serving Cinnamon Coffee Cake
Adapted from Chocolate Covered Katie
Serves 1
INGREDIENTS
3 Tbsp. all-purpose flour
1/4 tsp. baking powder
1/16 tsp. salt
1 Tbsp. sugar
1 Tbsp. + 2 tsp. water
2 tsp. oil
1/4 tsp. pure vanilla extract
For the streusel:
1/8 tsp. cinnamon
1 and 1/4 tsp. brown sugar
1/4 to 1/2 tsp. oil
tiny, tiny pinch salt
cooking spray
INSTRUCTIONS
1. Combine batter dry ingredients and mix well. Add wet and mix until just mixed.
2. In a tiny bowl, combine all streusel ingredients.
3. Fill a greased mug with 1/2 of the batter mixture. Sprinkle on two-thirds of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel.
4. Cook for about 1 minute in the microwave.
5. Serve and enjoy!
