My trips to the grocery store lately have been a lot of fun for me lately.
I think my travels have made grocery shopping even more fun to me. After weeks of dining out, the idea of selecting fresh, raw veggies to enjoy is the best!!!! I’ve been buying the rainbow, and truthfully, I’ve been drawn to veggies that I haven’t eaten in a while.
This week, broccolini caught my eye.
While there are many ways to cook this beautiful veggies, I decided to try something new this week. Considering that I’ve roasted just about every veggie I’ve ever met, why not see what happens to broccolini when you cook it at high temps in the oven. The result: brilliant!
Roasted Broccolini
Serves 2
INGREDIENTS
1 bunch broccolini
cooking spray
lemon pepper seasoning
granulated garlic powder
INSTRUCTIONS
1. Preheat your oven to 450 degrees.
2. Prepare a cooking sheet with cooking spray. Spread out your broccolini on the pan to prepare for roasting.
3. Spray the tops of the broccolini lightly with cooking spray and sprinkle with garlic powder and lemon pepper. Roast for 12-13 minutes, until the stalks become slightly caramelized.
4. Serve and enjoy! Pair with Jenny Craig’s Meatloaf dinner, if you’ve got it handy. Perfection!
