I love homemade salsa. I’ve been trying to find a good store salsa… but real talk, they’re just not good. I’ve bought the kind in the jar, the kind in the deli, the cheap kind, the expensive kind, and they’re just blech.
But this… this is tasty, y’all!
I know. You want to get in there with a straw and just drink it… that’s how I feel about it too. Oh, wait… that’s just me?? Seriously, this stuff is top-notch delicious, and I have been eating anything that I can enjoy with salsa. Mostly the Jenny Craig Quesadilla… but I even made a taco salad this week so I could douse it in salsa.
And, it was another excuse to use my Nutri Ninja… as you’ll see below. Addicted to this thing, I tell ya! It sits on my counter.
Smoky Fire-Roasted Tomato Salsa
From Weight Watchers
Serves 8
INGREDIENTS
1/2 small red onion
1 jalapeno pepper
cooking spray
1 Tbsp. chopped chipotle chiles, canned in adobo sauce
1/2 Tbsp. lime juice
1/4 tsp. kosher salt
1/8 tsp. ground black pepper
1 clove garlic
1 can (14.5 oz) fire-roasted diced tomatoes, undrained
2 Tbsp. chopped cilantro
INSTRUCTIONS
1. Preheat broiler.
2. Cut onion into wedges. Slice jalapeño, and remove seeds. Place on a boiler pan, prepared with aluminum foil and cooking spray.
3. Broil 2 minutes on each side or until veggies are slightly charred.
4. Place all ingredients in your food processor or Nutri Ninja blender. Process until chopped well.
5. Transfer mixture to a bowl and enjoy!
