When it comes to salad dressing, I tend to be a creature of habit. Homemade ranch dressing, a few of my Trader Joe’s favorites… and a classic vinaigrette. I usually stay RIGHT THERE with very little variation.
Sometimes, I get on the phone while I’m grocery shopping… and that results in a lot of new items in my shopping cart. I found Annie’s Light Goddess dressing during a long chat while shopping at Sprouts, and I’m so glad I did.
The dressing itself is a little pricier than I’d like it to be, so I began scouring the interwebz looking for someone who’d come up with a suitable copycat. I hit the jackpot on Pinterest when I found someone who had done a scientific experiment, and really came up with a good recipe that matches Annie’s original.
I really couldn’t pinpoint the flavor of the dressing… but I knew that I loved it. Turns out, the secret ingredient is Tahini. I had never purchased it, so it was a little bit of an adventure. The tahini I ended up buying came in a tin, and was reminiscent of natural peanut butter to me. You have to STIR aggressively to get the substance combined. Fun to try!
This dressing though… it’s really, really delicious. While it has tahini and soy sauce in it, it’s not really an Asian dressing to me… just an awesome one. Fit for a goddess…
Copycat Annie’s Light Goddess Salad Dressing
Adapted from The Captious Vegetarian
Makes 1 1/8 cup dressing
1/3 cup canola oil
6 Tbsp. water
3 Tbs. tahini, as thick as possible, lightly toasted
2 Tbs. + 1/2 tsp. apple cider vinegar
2 tsp. soy sauce
2 1/4 tsp. lemon juice
3/4 tsp. sea salt
1 large clove garlic, finely minced or crushed
1 1/2 tsp. hulled sesame seeds, lightly toasted
1 Tbsp. minced parsley
1 Tbsp. minced chives
1/16 tsp. xanthan gum
1. Mix all ingredients and move to a salad dressing holder. Note: I like this one by Pampered Chef and because it allows you to mix a dressing well, I mixed it in the holder. Next time, I may whisk in a small bowl.
2. Serve it on your favorite salad and ENJOY!!! Note: As you store the dressing, it may thicken up over time in the refrigerator. I added a little extra water to the mixture when I felt I needed the consistency a little thinner later in the week. Still delicious.
