Confession: One day, I want to have a big garden (and a husband who can help take care of it, of course.) I want to grow all the veggies I love to eat… and to be able to savor my salads and dinner, and say… “OMG, I grew these!”
Until then, I’ll keep going to the farmer’s market, and to Sprouts to get my veggies. And, I’ll keep making yummy salads like this one.

Don’t be too surprised that this recipe has all of my favorite salad veggies: cucumbers, tomatoes, avocado… and there’s also a herby, lemony vinaigrette making it amazing! I hope you love it as much as I do!!
Summer Chopped Vegetable Salad
From Weight Watchers
Serves 4
INGREDIENTS
2 Tbsp. chopped fresh parsley
2 Tbsp. fresh lemon juice
2 Tbsp. olive oil
2 tsp. minced garlic
1/4 tsp. salt
1/4 tsp. ground black pepper
3 large tomatoes, chopped
1 English cucumber, diced
1 diced peeled avocado
INSTRUCTIONS
1. Combine the first 6 ingredients in a large bowl and stir with a whisk.
2. Add tomatoes, cucumbers, and avocado. Toss gently to coat.
3. Serve and enjoy!
