Spring has certainly SPRUNG in Colorado… and I’m loving it!
While we don’t see much rain here in Colorado, the umbrellas seemed perfect to represent the month of April throughout the country as we go through what’s going on with me currently. Enjoy!
CURRENT GROCERY FIND:
I love Trader Joe’s. I seriously wish there was one closer to where I live (or at least Denver West!) When I go there, I always stock up on all the veggies. Often too much… but they have so many good choices!!!
This week, they were sampling the Healthy 8 Chopped Veggie Mix made into a slaw-style salad with their Asian Style Spicy Peanut Vinaigrette and some crunchy Sesame Sticks.
I left the sesame sticks out, but mixed the salad and loved it! Crunchy and incredibly flavorful! Watch for it next time you’re at TJs!
CURRENT VIDEO APPEARANCE:
It’s Rockstar season again, y’all! One of my favorite sales reps and I did a lip sync video a few weeks back as we were prepping for the competition. Yep, we think we’re hilarious.
If we had to shoot this a few times, we would have been all serious about it, but we were able to knock this out after a meeting in one take. Done and done!
CURRENT FAVORITE LOOK:
I’m LOVING headscarves right now. They’re those thinner, not-so-fluffy scarves worn in your hair instead of around your neck. Here’s two ways I’ve rocked this look this month. And, now I need more! I got two more from the Lilly for Target collection. Expect to see them soon!
CURRENT GO-TO SNACK:
It’s the Jenny Craig Triple Chocolate Cheesecake on the sweet side of the house. Decadent, fulfilling, and fabulous.
On the salty side, it has to be this No Potato Cauliflower Salad. Yum-yum!
CURRENT TV SHOW:
Crap. I found a new show, and I’m sort of obsessed with it. Have you guys seen this show Married at First Sight on A&E?
It’s so good! I ran into it on a lazy Sunday afternoon, watched a mini marathon, and now I’m hooked. It’s about couples that are professionally matched up and they meet for the very first time…. at the altar. It’s not cheesy or scandalous like the bachelor, but man, it’s fascinating… and it makes this sappy girl want to find love. Sigh
OMG… I’m still working on the baby blanket I mentioned last month. Completely different colors than what I projected, but it’s still cute. It’s about 2/3 done, but I have until late June to get ‘er done!
CURRENT FUN VISITOR:
When one of your BFFs makes their way to town, it’s the best time of the month. And, Jaede’s visit this month was right up there as one of my favorite moments of the month.
I was trying to get the belly in the pic. It didn’t work, but always a blast with JDKO.
Last month, I mentioned that I wanted to clean out my closet. I did it! I took four bags to consignment, shipped a box to a dear friend in North Carolina, and even got rid of my falling down shoe racks! The new ones are from Target’s Threshold collection.
In May, I want to organize the top half of my closet… the shelf area needs so structure so I can find everything. And, I need to get rid of some purses and bags and whatnot.
CURRENT NAIL POLISH:
I love everything about this Essie polish. It’s called Play Date, and it’s on my fingers and toes right now. 🙂
CURRENT APPETIZER OBSESSION:
I got to spend some time with my friend Bev this month… and it was so great to catch up and make some Team Bev plans! So excited to get our team together for the big race in June!
We dined at True Food Kitchen, and I’m officially obsessed. Especially with this appetizer!
This insanely gorgeous veggie crudite was how we started our meal… and it came with two tasty dips: Creamy Black Olive and Tzatziki. So good! Can’t wait to enjoy this again!
I also continue to scour Denver grocery stores for Watermelon Radish. I still haven’t found them…
