A few weeks ago my friend Jen sent me a link for a recipe that she pinned for Double Chocolate Brownie Batter Pancakes. What the heck??
They looked good.. in an overwhelmingly fudgy way, dripping with some sort of chocolate syrup.
Yep. I had to try them!
Considering that it was New Year’s Day and that I got a great night sleep last night, so I figured today was the perfect day to try them! Oh, and they’re HEALTHIER than normal chocolate pancakes! I forgot to mention that minor (yet incredibly important) detail!
Mine weren’t quite as fudgy as those in Chocolate Covered Katie’s original recipe, as I exchanged the dark chocolate cocoa powder for regular cocoa powder and I simply couldn’t add a fudge sauce to them before 9am. Just couldn’t.
My brain is already churning with ideas for how I can add PB2 to these, or perhaps add that PB syrup to them that I used on the Peanut Butter French Toast I made a few weeks ago.
These are really good, and surprisingly egg-less. Try them today, or Pin them for when you’re ready for chocolate amazingness.
Chocolatey Delicious Pancakes
Recipe by Chocolate Covered Katie
Serves 1
INGREDIENTS
Pancakes
1/4 cup flour
1/4 tsp. baking powder
1 Tbsp. Hershey’s Special Dark cocoa or dutch cocoa (I used regular cocoa)
2 packets Truvia
1/16 tsp. salt
1 Tbsp. applesauce + 1/2 Tbsp. oil
1 tsp. pure vanilla extract
5 and 1/2 Tbsp. milk of choice
Glaze
1 Tbsp. skim milk
3-4 Tbsp. powdered sugar
INSTRUCTIONS
1. Combine all dry pancakes ingredients in bowl.
2. Add wet pancake ingredients and mix well.
3. Cook in a non-stick skillet sprayed with cooking spray. The recipe made 3-4 smaller sized pancakes.
4. Make a glaze while the pancakes cook. Combine powdered sugar and milk in a small bowl and stir with a whisk until smooth.
5. Top pancakes with the glaze and serve.

The nutritional information was a little bit different than what the original recipe suggested (130 cal v. 345 for mine.) You can leave the glaze off and scrape off 126 calories there, but you need something to top it….
All in all, I LOVED these! Very tasty and a twist on my usual pancakes! Enjoy!
