Yep, you heard me right. Cookie. Dough. Mini. Desserts
I made these {seriously} incredible mini desserts a few weeks back in anticipation of hosting some friends at my house for a tarot party. And, if you read my post about the Basil Chicken Lettuce Wraps, you know that this party actually never happened. Life happened, and a few emergencies popped up for my dear friends. Not only did they leave me with a full recipe of those tasty lettuce wraps (they’re wonderful, y’all), but it also left me with ten mini cookie dough shots.
Yes, TEN. Of these.
And, while I love to eat healthy foods and can’t get enough veggies most day, I have to confess: I loved eating these every single day until they were gone. I was even a little sad when I ate that last one. That good.
My inspiration to make these came from all of those social media posts about the cookie dough shops in NYC. Have you seen these? They basically scoop up cookie dough… LIKE ICE CREAM. {I know} Wildly popular in New York, and what seems like a million miles from me. So, I made my own, and now you can too.
Disclaimer: There are no eggs in this dish, but there is raw flour. Some people are a little concerned about raw flour… as it can have contaminants. I can’t speak to every single bag of flour out there, but I can say that I ate these (all ten of them) and had no issue. The interwebz tell me that you can toast the flour lightly in the oven, if you’re worried… totally your choice. If eating raw (no egg) cookie dough is wrong, I don’t know if I wanna be right.
Cookie Dough Mini Desserts
Adapted from Love from the Oven
Serves 10
INGREDIENTS
1/2 cup butter softened
1/2 cup brown sugar
1/4 cup white sugar
2-4 Tbsp. milk
2 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup flour
3/4 cup oats
3/4 cup chocolate chips
1/4 cup mini peanut butter cups
1/4 cup sprinkles
INSTRUCTIONS
1. Mix butter and sugars with an electric mixer until well combined. Mix in 2 TBSP of milk (reserve the rest) and vanilla, mix until well combined.
2. Add in baking soda, salt, flour, and oats, using your electric mixer to blend well.
3. Hand stir in the chocolate chips and sprinkles, stirring until well combined. Mixture may be very thick and additional milk can be added if desired. Tip: You can buy the chocolate chips and peanut butter cups in bulk bins at some grocery stores. Then, you can just buy what you need.
