I went shopping this weekend… and around every corner, I saw FALL CLOTHES!
It’s not even September yet, and the stores are stocked with sweaters and scarves and boots and jackets! It’s like 90 degrees out… WHAT THE HECK!!!
I tried hard not to succumb to the fall weather fashion, but there were a few pieces that I just had to have… including this simple sweater from Target’s Mossimo collection. Yep, I bought a sweater!
Cute, right? And, if I tell the absolute truth… I’m sort of ready for fall. Not for winter (never for winter EVER), but I’m ready for boots, tights, and Starbucks fall flavors… specifically the Salted Caramel Mocha. Yummmm!
In honor of my craving for fall, I thought I’d share with you a fall-forward recipe…
These pancakes have a yummy apple-cinnamon flavor that make you crave a bonfire later in the day, and that cool weather that’s surely just around the corner. Made with low fat buttermilk and lowfat yogurt, you keep your calories in check while enjoying a yummy batch of pancakes!
Apple Cider Pancakes

Serves 2
INGREDIENTS
1 cup dry lowfat pancake mix
1 egg, separated
2 tablespoons olive oil
1/4 cup lowfat buttermilk
1/4 cup plain lowfat yogurt
1 teaspoons honey
1/2 cup apple cider (or apple juice if you can’t find cider)
Cooking Spray
Cinnamon Sugar
INSTRUCTIONS
1. Place the 1 cup of dry mix in a large bowl. In a small bowl, whisk the egg white, buttermilk, yogurt, honey and cider. In another small bowl, whisk together the egg yolks and olive oil. Whisk the wet ingredients in one bowl until combined. Pour the wet ingredients into the bowl with the dry mix and stir until just combined. Lumps are good! Don’t get rid of them!
2. Spray skillet with cooking spray. Measure 1/3 cup of the batter and pour into the pan. When you start to see small bubbles on the top of the pancakes and the edges are beginning to cook, flip the pancake. Be sure to add more cooking spray as needed so the pancakes don’t stick.
3. While the pancakes are still warm, top with some I Can’t Believe It’s Not Butter. Sprinkle with the cinnamon and sugar mixture and eat!
