When I’m really focusing on losing weight with the Jenny Craig program, I spend less time in the kitchen trying out new recipes.
More of my time is spent chopping veggies and planning out healthy snacks, and ideally at the gym! I always try to have salad ingredients available because it’s such a handy snack. I really prefer to whip up on my own dressings as opposed to eating the bottled kinds because I can control the ingredients and add all my favorite flavors. It’s even more fun now with the new salad dressing holder I picked up from Pampered Chef.
The recipe I’m sharing today is one of my all-time favorite dressings and comes from my dear friend Deb. It’s a mustardy, herby vinaigrette that has just 41 calories per tablespoon. Where I tend to use more with creamy dressings, the vinagrette is liquidy and usually a tablespoon is plenty!
It’s become a staple dressing at our gatherings, and I’m sure you and your family will love it too! I joke that it’s her “soon-to-be-famous” dressing because you guys are going to love this dressing and share it with all your friends after you try it!
Deb’s Soon-To-Be-Famous Vinaigrette

Serves 12
INGREDIENTS
1 tsp. dijon mustard
4 Tbsp. red wine vinegar
1/2 tsp salt
1/2 tsp black pepper
1/4 cup water
1/4 cup olive oil
Optional Add-Ins:
minced parsley
snipped chives
minced garlic
INSTRUCTIONS
1. Mix all dressing ingredients in the container of choice. If you don’t have a dressing holder, a Mason jar works well too! Note: You can also use any kind of vinegar. I used red wine this time, but I’ve made it with white wine, balsamic, etc.
2. Choose your mix-ins. Note: I simply choose from what I have in my fridge. This time around, I added parsley and minced garlic. Experiment though… there are lots of herbs you can use!
3. Add the vinaigrette to your favorite greens and enjoy!
