New Jenny Craig Recipe Creation: Unstuffed Cabbage Bowl | No Thanks to Cake
Sometimes, I just want a bowl of comfort food. This recipe hits the spot when that type of craving comes on. Shredded cabbage + onion + a few pantry staples, and you've transformed a simple Jenny Craig menu item into a hearty meal. Enjoy!
- 1 Jenny Craig Stuffed Green Bell Pepper
- 4 cups green cabbage, shredded
- 2 Tbsp. beef broth, reduced sodium
- 1 Tbsp. tomato sauce
- 1 tsp. soy sauce, reduced sodium
- ¼ cup sweet onion, diced
- cooking spray
- salt and pepper
Prepare your stuffed pepper in the microwave per package instructions. Remove and set aside to cool.
Prepare a large skillet with cooking spray, and add cabbage and onion. Sprinkle with salt and pepper. Cook at medium heat until cabbage becomes tender and cooked through, about 12-15 minutes. Stir frequently to avoid the vegetables getting overly charred.
Remove the stuffed pepper to a cutting board. Chop the pepper and the beef mixture into small pieces.
Add broth, soy sauce, and tomato sauce to the sauce remaining in the microwaveable bowl. Stir to combine.
Add beef and pepper to the skillet + the sauce mixture. Stir to combine and mixed well.
Serve and enjoy. Add salt and pepper, if needed.
