New Jenny Craig Recipe Creation: Unstuffed Cabbage Bowl | No Thanks to Cake

Sometimes, I just want a bowl of comfort food. This recipe hits the spot when that type of craving comes on. Shredded cabbage + onion + a few pantry staples, and you've transformed a simple Jenny Craig menu item into a hearty meal. Enjoy!


  • 1 Jenny Craig Stuffed Green Bell Pepper
  • 4 cups green cabbage, shredded
  • 2 Tbsp. beef broth, reduced sodium
  • 1 Tbsp. tomato sauce
  • 1 tsp. soy sauce, reduced sodium
  • ¼ cup sweet onion, diced
  • cooking spray
  • salt and pepper


  • Prepare your stuffed pepper in the microwave per package instructions. Remove and set aside to cool.
  • Prepare a large skillet with cooking spray, and add cabbage and onion. Sprinkle with salt and pepper. Cook at medium heat until cabbage becomes tender and cooked through, about 12-15 minutes. Stir frequently to avoid the vegetables getting overly charred.
  • Remove the stuffed pepper to a cutting board. Chop the pepper and the beef mixture into small pieces.
  • Add broth, soy sauce, and tomato sauce to the sauce remaining in the microwaveable bowl. Stir to combine.
  • Add beef and pepper to the skillet + the sauce mixture. Stir to combine and mixed well.
  • Serve and enjoy. Add salt and pepper, if needed.
