Jenny Craig Recipe Creation: Thai Curry Rainbow Veggie Bowl with Chicken | No Thanks to Cake

Ingredients
  

  • 2 cups tri-color cole slaw mix
  • 2 scallions chopped
  • 1/4 cup bell peppers chopped
  • 1/2 cup broccoli florets
  • 2 Tbsp. red onion sliced
  • 1 tsp garlic minced
  • cooking spray
  • 1 Tbsp cilantro chopped, for garnish
  • sliced jalapeno pepper for garnish

Instructions
 

  • Prepare a skillet with cooking spray, and add your garlic, broccoli, cabbage mix, peppers, and onions. Saute for 4-7 minutes, stirring frequently and until vegetables become tender and vibrant in color. Note: You can add whichever veggies you might have on hand.
  • Meanwhile, cook your Jenny Craig meal in the microwave, per packaging instructions.
  • Add your Thai Curry mixture to to the skillet, stirring to combine.
  • Move to a shallow bowl to serve, topping with scallions, cilantro, and jalapenos. Add hot sauce, if desired.
