Last Sunday afternoon, I had a chance to catch up with my girl Tiffany. This time, we didn’t have to travel to Vegas to connect, instead just to the Cherry Creek mall. The reason for our get-together? We had a date with Leo.
I can’t even begin to tell you how much I loved this rendition of The Great Gatsby. Having read the book nearly 20 years ago, I didn’t remember the twists and turns in the plot which made the movie a fun trip down memory lane. I fondly remember the book being one of my favorites that I read in high school. It was one that I wrote a bunch of papers about in English class, detailing the symbolism, the foreshadowing, the development of characters. My inner geek loved revisiting all of this on the big screen, to the Jay-Z and Beyonce inspired soundtrack.
It was truly one of the most beautiful movies I’ve seen in a long time… the music, the costumes, hair and makeup, and did I mention the music… All perfection! Go see it!
After the movie, we headed over to lunch at Watercourse, an amazing Vegetarian restaurant in Denver – – home to the Champ, my absolute favorite beet sandwich that inspired this recipe. We also indulged in Buffalo Seitan Wings… which were so delish and hard to stop eating!
Those meatless, yet meaty tasting wings (hard to explain) were so flavorful… that they left me craving more of that spicy Buffalo flavor, which leads me to today’s recipe!
What’s better than buffalo lettuce wraps with all the toppings? I can’t think of much better! Try these bad boys… you won’t be sorry!
Buffalo Turkey Lettuce Wraps
Serves 1
INGREDIENTS
1/4 lb. extra lean ground turkey
2 leafs bibb lettuce
2 scallions, sliced
1/2 cup grape tomatoes, sliced
1 Tbsp. buffalo sauce (more to taste)
1 Tbsp. light ranch dressing
INSTRUCTIONS
1. Brown ground turkey in a skillet until cooked completely.
2. Grind ground turkey in a food processor to make the meat a fine, consistent texture. Move ground turkey to a small bowl.
3. Add buffalo sauce and mix to combine.
4. Add 1/2 of meat mixture in each of the lettuce leaves. Top with tomatoes and scallions. Drizzle with light ranch.
5. Enjoy!
