Have you seen those recipes for “pancakes’ that are made from eggs and bananas (and that’s it?) I’m just not that into all that. I mean, isn’t that just banana eggs?
When I spotted this recipe for pancakes that include real flour and real ingredients claiming to be low in Smart Points, I decided to give them a go. You guys, these are the fluffiest most delicious pancakes I’ve made in a long time.
The SP values include the pancakes only. You’ll need to calculate points for your toppings. For me, I chose 1/4 cup sugar free syrup (1 SP) and 1 Tbsp. PB2 (1 SP), for a total of 6 SPs.
Healthy One-Serving Pancakes

INGREDIENTS
1/3 cup self-rising flour
2 1/2 Tbsp. nonfat Greek yogurt
3/4 egg beaten (about 1 1/2 Tbsp. egg)
1/2 tsp. vanilla
1/2 tsp. baking powder
2 1/2 Tbsp. water (more if needed to create batter texture)
INSTRUCTIONS
1. Whisk the wet ingredients in a medium bowl. Add dry ingredients and stir until combined and a batter forms.
2. Preheat a skillet to medium heat. Note: I use the Perfect Pancake Pan (affiliate link) and it makes PERFECT pancakes every time.
3. Divide batter into four pancakes (about 1/4 cup each). Cook until done and both sides are beautifully browned. Look how THICK and FLUFFY they turn out…
4. Plate and top with your favorite toppings and enjoy!
