PF Chang’s is one of my favorite places to eat out. While it feels indulgent, they have so many healthy options on their menu to choose from, and their new menu with the quinoa is phenomenal!
My go-to appetizer at PF Chang’s actually comes from their “sides” menu… and it’s a salad. I’ve ordered this with friends, co-workers, customers, and everyone is always impressed.
Doesn’t that look delicious? The ingredients are simple; the cucumbers are crunchy. One of my favorite dishes when I dine out… I can now make it at home, and so can you!
PF Chang’s Shanghai Cucumbers
From PF Changs
Serves 4
INGREDIENTS
2 english cucumbers, chopped
3 Tbsp. reduced sodium soy sauce
1 tsp. white vinegar
1/4 tsp. sesame oil
1/2 tsp. black sesame seeds
INSTRUCTIONS
1. Chop your cucumbers into quartered pieces, and move them to a large bowl.
2. In a small bowl, mix the dressing ingredients: soy sauce, vinegar, and sesame oil. Whisk to combine.
3. Pour dressing over the cucumbers and toss to coat the cucumbers.
4. Sprinkle cucumbers with the sesame seeds, and toss to combine again.
5. Serve and enjoy!
