I’m going through a cabbage phase, and this amazing slaw is certainly fueling the obsession!
I’m a HUGE fan of Uproot Kitchen recipes. If you’re not following Marisa’s site, you totally should! She creates the most beautifully flavorful, colorful, healthy dishes, and this one is no exception!
I’ll have you know that this is my second batch of this slaw. I’ve added it to a burger, stuffed it inside of a burrito, added it to tacos, and eaten it right out of a bowl. So many options!
I’m definitely hooked and you will be too! I made a few modifications to the recipe from Marisa’s original. Know that the addition of cumin was initially a mistake, but I really like the flavor it adds! Enjoy!
Simple Zesty Cabbage Slaw
Adapted from Uproot Kitchen
Serves 8
INGREDIENTS
1 head of cabbage, shredded (red, green, or a combination) (about 8 cups)
2 Tbsp. olive oil
2 Tbsp. water
3 Tbsp. lime juice
1/2 tsp. salt
1/4 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. cumin powder
INSTRUCTIONS
1. Shred cabbage into bitesize pieces. I spiralized my cabbage.
2. Whisk together oil, lime juice and seasonings.
3. Pour over the shredded cabbage and toss well to combine. Allow the slaw to chill in the fridge for 10 minutes so the flavors come together.
4. Adjust seasoning to taste and serve immediately.
