Ever since I found the Shredded Brussels Sprouts at Super Target, I can’t stop experimenting with them. With my latest batch, I made this….
And, I’ve always wanted to try a raw brussels sprouts dish. After I spotted Skinnytaste‘s shredded salad on instagram, I knew I needed to try it! It’s crunchy, it’s tart, and it’s delicious! I also think that super simple dressing would be delicious on greens… you’ll see it again here on NTTC, that’s for sure!
Raw Shredded Brussels Sprouts with Lemon and Oil

Serves 5
INGREDIENTS
9 oz. brussels sprouts, shredded
2 Tbsp. olive oil
3 Tbsp. lemon juice
kosher salt and fresh cracked pepper, to taste
INSTRUCTIONS
1. Add your brussels sprouts to a medium bowl. Note: If you can’t find shredded brussels sprouts, you can always thinly slice them on your own. My Target sells a Market Pantry branded bag, ready to go!
2. Mix the olive oil and lemon juice in a small bowl with a whisk. Add salt and pepper to taste.
3. Combine the dressing and the sprouts in a medium bowl. Toss to combine. Refrigerate 30 minutes before serving. Note: I ate this salad over multiple days and the brussels did great as they are so hearty. Enjoy!
