I adore brussels sprouts. What a great vegetable, and I love how the flavor develops when you roast them!
My dad has been raving about a shredded brussels sprouts casserole he makes (with all the butter and cream!) and Lately, I’ve seen so many recipes for salads with shredded sprouts.
When I saw that Target had the shredded variety, I was so excited! They’re right near the bagged cauliflower and broccoli.
I love that this recipe is that it is a fast way to prepare brussels sprouts. When I get home from work, I am usually ready to have dinner on the table immediately… and this dish helps to make that happen, while offering a delicious combination of flavors.
Shredded Balsamic Brussels Sprouts with Prosciutto
Serves 2
INGREDIENTS
1 (9 oz.) bag brussels sprouts, shredded
2 slices prosciutto, diced
1 tsp. minced garlic
1 Tbsp. balsamic reduction
salt
pepper
cooking spray
INSTRUCTIONS
1. Slice your prosciutto into small pieces.
2. Preheat a skillet prepared with cooking spray. Add the garlic and cook for 1-2 minutes, stirring. Add the prosciutto and saute for 2-3 minutes.
3. Add brussels sprouts, and stir to combine. Cook for 6-9 minutes until sprouts become tender. Stir frequently, so that your sprouts caramelize without burning. Add salt and pepper to taste.
4. Remove to plates, and drizzle with balsamic glaze.
