Oh my… I can’t believe this one.
Coming home from work last night, I was tired after sitting in way too much traffic, but I wanted to make this pizza. I ran quickly into the grocery store, picked up what I needed, and I’m SO glad I did.
Seriously… look at this…
Unbelievable. This pizza blew my mind.
A few months ago, I came across a Bacon and Peppadew Pepper pizza at Whole Foods and fell completely in love. It combines the salty-sweet goodness that always makes for my favorite pizzas. Kind of like my Fig Prosciutto Pizza or a Hawaiian pizza yet completely different.
The salty-sweetness sits on top of a cheesy veggie crust… and it’s out of this world. Feel free to top the pizza crust with whatever you’d like… but just once, I recommend you try this flavor combination and let me know what you think.
Important Note: I’m hearing a lot of people say that they’ve had problems with the cauliflower being to watery and needing to wring out liquid. If you use roasted cauliflower, you don’t have to wring it out… steamed would need some work. Just roast it, y’all! Easy instructions here.
Bacon and Peppadew Pepper Cauliflower Pizza
Serves 1
INGREDIENTS
1/2 cup cooked cauliflower rice – I used whole roasted cauliflower
1 egg white
1/4 cup reduced fat mozzarella cheese, shredded
1 tsp. garlic, minced
salt and pepper
1 1/2 Tbsp. pizza sauce
2 slices center-cut bacon, cooked and diced
2 peppadew peppers, sliced – found in the olive bar at the deli
1/4 cup reduced fat mozzarella cheese, shredded
parchment paper
Williams-Sonoma Pizza Seasoning
INSTRUCTIONS
1. Preheat the oven to 400 degrees.
2. Combine cauliflower, 1/4 cup mozzarella, egg white, and garlic in a small bowl. Season with a few shakes of salt and pepper. Note: I used leftover roasted cauliflower and just pulverized it in the food processor.
3. Add a piece of parchment paper to an ungreased pizza pan. Add your cauliflower mixture to the parchment paper and spread it into a circle in a thin crust pizza shape.
4. Bake for 18-20 minutes until crust becomes golden brown. Look how delicious it looks!!
5. Add your toppings. For me, I chose sauce, bacon, peppadew peppers, and cheese. Simple and delicious!
6. Bake at 400 degrees for another 10-12 minutes, until cheese has melted (and you can’t resist any longer!)
7. Slide the pizza off the parchment paper, sprinkle with pizza seasoning, and serve… and enjoy!! You should be able to pick it up with your hands, but keep a fork close by, just in case!
