I had coffee with my friend Kris this weekend and she was asking about what kind of veggies I eat on a weekly basis. I explained to her that I’ve been making a big quantity of veggies over the weekend and then eating them throughout the week. Food prep to the max!
Most weeks, I make a big batch of the Costco Sweet Kale Salad (love it!) and I always make a big veggie salad to munch on. This week, I tackled the 2 lb. bag of green beans that I bought at Costco, in one quick recipe. This one….
Blame it all on my roots… but I love some soft and flavorful green beans, cooked Southern style. And Southern style to me means BACON. Now to keep this recipe on the skinny side, there’s just one tablespoon of bacon… but it adds a ton of flavor. I’m down to my last cup of these beans as I write this… and I’ll definitely be making them again!
Crockpot Skinny Southern Green Beans

Serves 6
INGREDIENTS
2 lbs. fresh green beans, washed
½ large onion, diced
1 heaping Tbsp. bacon, cooked and diced
2 Tbsp. white vinegar
2 Tbsp. truvia
½ tsp. salt
½ tsp. black pepper
2 cups reduced-sodium chicken stock
1 Tbsp. minced garlic
INSTRUCTIONS
1. Place green beans, bacon and chopped onion in crock pot.
2. In a medium bowl, mix chicken stock, garlic, vinegar, sweetener, salt and pepper. Whisk mixture and pour over green beans, then place in slow cooker.
3. Cook on high for 4 hours or on low for 8 hours, until beans are tender.
4. Serve as an amazing side dish to your meals for the week.
