I hate that tomato season is winding down.
By tomato season, of course, I mean summer…. but it’s also that time when you find the most beautiful, most delicious tomatoes around every corner. You don’t just have to go to Whole Foods to get them; you can find them at your local grocery store, at Farmer’s Markets and if you’re VERY lucky, you can pick them from your garden.
I’ve been trying to enjoy tomatoes in different ways this month… to enjoy the delicious veggies while they last.
I found a VERY simple recipe in my latest Weight Watchers cookbook, and decided to give it a shot! I tried it for the first time last Thursday and have since made it again… it’s that good!
Tomato-Avocado Salad
From Weight Watchers Five Ingredient 15-Minute Recipes – Summer 2012
Serves 4
INGREDIENTS
2 medium tomatoes, cut into 8 wedges
1 medium peeled avocado, thinly sliced
1 1/2 Tbsp. extra-virgin olive oil
1 1/2 Tsp. cider vinegar
1/8 tsp. salt
1 garlic clove, minced
freshly ground black pepper (optional)
INSTRUCTIONS
1. Slice your tomatoes and avocados and place in a bowl.
2. Combine olive oil, garlic, vinegar, salt and pepper in a small bowl, stirring well with a whisk. Note: I added extra garlic (because that’s what I do.)
3. Drizzle dressing over tomato-avocado mixture. Note: Be sure to top the avocado with the dressing soon after cutting it. The vinegar in the dressing will help prevent the avocado from turning brown.
4. Plate and serve!
