Oh my goodness, my dears… I have something REALLY special for you today. First, let me introduce you to Katie.
Katie is the voice behind one of my favorite cooking blogs – The Dashing Dish. If you’ve never read the Dashing Dish, you really should check it out. Katie creates really amazing low-calorie and flavor-full dishes. She shares the most gorgeous pictures of her creations and often shares mouth-watering milkshakes, decadent dinners, and delightful dessert options. She is also the inventor of the amazing recipe I share with you today.
This is actually the 2nd Dashing Dish recipe I’ve shared on No Thanks to Cake. The first was for a ridiculously delicious stack of Peanut Butter Pancakes! Those pancakes and these donuts have some shared ingredients (egg whites, coconut flour), so if you haven’t tried them yet, you now have the perfect excuse.
Did I mention that we’re about to make 72-calorie donuts???? And, out of all flavors… Katie chose MAPLE. Just for that alone, you need to add Dashing Dish to your Google readers ASAP.
Maple donuts are pretty much my favorite pastry ever. Seriously. So seriously that I could have easily called this blog “No Thanks to Maple Donuts.” That sounds awfully wordy though.
These grain-free babies require zero frying, but they do require a fancy pan. In reality…. I’m always looking for new kitchen items. This recipe was just a great excuse for me to add a donut pan to my collection of gadgets and whatnot.
During a brief shopping trip this weekend, I stumbled upon a Sur la Table that had this little guy available for my purchasing pleasure. It was $10 and now that I’ve tasted the donuts. WORTH. EVERY. PENNY. I also spotted one of these pans at Target yesterday… $13. Wherever you get one, get one!
Ok, I’m pretty sure that you’ve waited long enough. It’s time to make the donuts!
Baked Maple Donuts (Grain-Free)
From The Dashing Dish
Serves 6
INGREDIENTS
½ cup coconut flour
½ tsp. baking soda
1/8 tsp. salt
1 whole egg
2 egg whites
2 Tbsp. low sugar maple syrup or honey
1 tsp. maple extract
2 Tbsp. unsweetened applesauce
½ cup skim milk or milk substitute of choice
12-15 pks. Stevia or ½ cup sweetener of your choice
Optional Maple Glaze
¼ Ideal powdered sugar or standard confectioner’s sugar
¼ tsp. maple extract
1 tsp. water (add more water by 1/8 tsp as needed)
INSTRUCTIONS
1. Preheat oven to 350 degrees. Spray a donut pan with cooking spray.
2. In a medium size bowl, mix together the dry ingredients.
4. In a separate bowl, mix together the wet ingredients.
5. Combine the wet ingredients with the dry, and mix until batter is smooth and free of lumps.
6. Divide batter evenly between the 6 donut molds. Bake for 20-25 minutes, or until toothpick comes out clean, and donuts are set.
7. Meanwhile, to make the glaze, combine powdered sugar, maple extract, and water until smooth in a small bowl. Note: I found the “Ideal” powdered sugar at Whole Foods. It’s made from Stevia. It’s a little expensive, but I thought I’d try it just this once.
8. Use a 1/2 teaspoon measure to spoon the glaze over the top of each donut. Enjoy!
My review of these donuts: Um, they’re crazy delicious! They end up to be the moistest donut I’ve ever had. It may be the applesauce or the absorbent nature of the coconut flour. Whatever it is, it’s awesome. The coconut flour does give them a slight coconut flavor, but mostly what you taste is the maple goodness of the O’s. Also, I used glaze on 1/2 of the donuts and left the other half dry. The next time I’ll glaze them all (because I like glaze), but they are equally tasty without. Bottom line: These little guys are DELISH. For someone who hasn’t had a donut in almost 2 years, it was quite the treat and seriously delish!
Still considering that blog name change. It could happen… 🙂
